It’s been years since I learned from a friend how to make these. This is a dish my kids love and prefer over regular mashed potatoes.
2.5 lbs Potatoes
1 1/2 c Shredded cheese (I prefer a colby and montrery jack blend)
1/2 c Sour cream
1/4 lb Bacon (pieces)
3 Tbs Butter
1/4 c Milk
Salt and pepper
Peel and dice the potatoes. Boil potatoes until tender. Make the potatoes into regular mashed potatoes first.
Then add the sour cream, cheese and bacon, mix well.
Enjoy! Goes well with Corn Flake Chicken!
