This pasta salad is my favorite! It has vegetables, cheese and pepperoni! I can eat just this for a meal and be completely satisfied.
1 1/2 c Cauliflower
1 1/2 c Broccoli
1 c Cherry Tomatoes
1/2 c Diced Pepperoni Stick
4 oz Cheddar Cheese Cubed
4 oz Mozzarella Cheese cubed
2 c Italian Dressing
1 lb Elbow or Rotini Noodles (Use Garden flavor for more colors)
Cook noodles until done. Rinse noodles under cold water to cool down noodles and stop the cooking process. Drain noodles and pour into a large bowl.
Add the Italian Dressing to prevent noodles from sticking. Add the rest of the ingredients and mix well.
Like most pasta salads letting this sit over night or for several hours before you serve it for best taste. The Italian dressing needs time to soak into the noodles. Use might need to add more Italian dressing if the noodles absorb a lot of the dressing.
