Breakfast Dishes

Other than our weekly Saturday breakfasts, I enjoy making breakfast on days the kids don’t have school or Derek doesn’t have work. Derek’s favorite breakfast is bacon and cheese omelets.  I decided to make some potatoes with breakfast this morning. Usually I just fry them up and season with salt and pepper, but I decided to make them differently.

1 medium size potato

1 clove Garlic minced

1/2 tsp Italian Seasoning

1-2 tsp Parmesan Cheese

Salt and Pepper to taste

Dice the potatoes up. Try to keep them close to the same size. That way they cook evenly.  In a non-stick pan lightly spray with cooking spray. I don’t like to add oil or butter to mine.

Add the garlic, cheese and seasoning. Cook over medium high heat til the potatoes are a lightly browned.

These potatoes are so yummy and smell great.

For the bacon and cheese omelet, I like to make them with 2 eggs.

2 eggs

1 tsp water

1 -2 Slices of American Cheese

1-2 slices of Bacon, crumbled

Salt and Pepper to taste

In a mug or small bowl scramble 2 eggs and 1 tsp water. Cook in a small skillet over medium high heat.  Spray skillet with cooking spray. When the egg is almost done add the cheese and bacon. When the egg is done cooking fold over the egg.

Don’t forget to add some fruits to make this an awesome breakfast!
