Quick Easy Quesadilla Ideas

Quesadillas are a simple and easy lunch idea. My kids love them. I get in the mood for them from time to time too. Here are a couple of ideas to make them.

Buffalo Chicken Quesadilla

Buffalo Sauce

Shredded cheese (I use a Colby Monterrey Jack Blend)

Diced Chicken

Ranch Dressing

Flour Shells

I think this is my favorite one. In a small pan heat up the diced chicken and add a little bit of buffalo sauce. This is where you can control the amount of spiciness.  In a large skillet, add one flour shell and add cheese, chicken and ranch dressing. Then folded the flour shell in half. Brown the shell on both sides over medium high heat. The cheese will have time to melt. Cut the quesadilla into triangles. Enjoy!

I like to only use one shell for this because the dressing and sauce can get messy.

This is the simplest one I do for my kids. It is quick and easy.

In a skillet over medium high heat, add one flour shell add cheese and chicken. Cover with a second shell. Allow the quesadilla time to lightly brown on both sides. Cut into triangles. Good served with sour cream and salsa. You can even add chopped tomatoes and lettuce too. My kids prefer it simple with just sour cream.

Pizza Quesadilla

Mozzarella Cheese

Pizza Sauce

Pepperoni slices, diced

Flour Shells

This is a nice twist to quesadillas. In a skillet over medium high heat, add one flour shell add a little pizza sauce, some cheese and pepperoni. Cover with a second shell. Allow the quesadilla time to lightly brown on both sides. Cut into triangles and serve.
