This Peanut Butter Oreo cheesecake is yummy! It has a nice creamy peanut butter cheesecake texture with the occasional piece of Oreo Cookie. The hot fudge topping adds a nice flavor to it.
1 1/2 c Crushed Oreo cookies (about 20 cookies)
1/3 c Butter
For Cheesecake filling:
3- 8 oz Cream Cheese (Room Temp)
1 c Peanut Butter (creamy)
1 c Sugar
1 tsp Vanilla
9 Oreo cookies crushed
Hot Fudge Topping
10 Oreo Cookies crushed
Mix 1 1/2 cups of crushed finely Oreo cookies and 1/3 cup butter. Firmly pressed the mixture into the bottom of a spring-form pan.
Preheat oven to 350 degrees
In the bowl of a stand mixer, beat together the cream cheese, sugar and the vanilla extract on medium speed. Add the eggs one at a time making sure to mix well before add next egg. Mix in the 9 crushed Oreo cookies, add the peanut butter. Mix on low until well blended.
Bake at 350 degrees for 60-90 minutes or until the center is slightly jiggly. If the top of the cheesecake starts to darken too much, cover with aluminum foil. Remember the top will be covered in fudge too!!
After baking, remove the cheesecake from the oven and allow to cool in a fridge overnight. Once cooled, top with hot fudge sauce leave some to drizzle over the cookies. Then add the crushed Oreo cookies and then drizzle with the rest of the fudge sauce.
