Okay, let me make this clear! This is not your true 12 layer cake. It’s a simpler verse that tastes and smells amazing. This cake is time consuming! I think from start to finish, it was about 2 hours.
Derek’s Nina makes a 7 layer chocolate cake that he says is amazing. I haven’t had the chance to try it yet. Nina just turned 90 years old. I don’t blame her if I don’t get the chance to try it at all.
This is a simple version of the classic Little Layer cake. I used 2 yellow box cake mixes. I prepared the cakes according to the instructions on the box.
I lined the 9 inch cake pan with wax paper fast and easy. No needing to scrub and wash the pan in between the cooking of each layer. Scoop 2/3 cup of cake mix into each cake pan. Spread the cake batter evenly in the pan. Cook each cake for 10-12 minutes or til done.
Allow the cake layers to cook. When the last cakes are in the oven, prepare the ganache for the layers. This cake takes lots of chocolate to coat the cake.
2 cups Heavy Whipping Cream
4 cups Semi sweet chocolate chips
Heat the heavy whipping cream over medium heat. Remove from heat and stir in the chocolate chips til the chips are melted. Stir til the chocolate is smooth.
Allow the ganache to cool slightly before icing each layer. Pour some chocolate on the cake can spread to cover the whole cake. It will drip of the sides and that’s ok. Keep adding layer after layer putting chocolate in between each layer.
This cake has lots of layers but keep going!!!
This cake has a strong aroma of chocolate when making it.
After all the layers have been added. Coat the sides of the cake with the remaining ganache. Some people add regular chocolate icing to the sides to make the cake look prettier. I like the rough look of this cake.
This cake is so big! You will need a tall glass of ice cold milk to wash down a slice. I know this cake isn’t as good as Derek’s Nina’s cake but it is so good. The cake is so soft and fluffy!
