I love fried rice but a lot of the Chinese restaurants don’t even make it anymore. They buy it frozen and heat it up. Gross! This recipe is fairly simple to make.
3 cups White Rice (make it a head of time it works better)
1 Egg beaten
1 Tbs Vegetable Oil divided
1/4 c Green Peas
1/4 c Carrots diced
1/2 Tbs Soy Sauce
2 Green Onions, diced
1/4 tsp Ground White Pepper
Pinch of Salt to taste
In a large skillet add 1 Tbs vegetable oil, carrots, onions and peas. Cook over medium heat until they are soft. Remove the vegetables and set aside.
Over medium heat, put the white rice in the skillet. Push the rice to the sides of the skillet to shape a circle in the middle. Add 1 Tbs Vegetable oil to the center. Add beaten egg and quickly mix the egg into the rice. Allow the egg to cook. Remove from heat.
Add the cooked peas, carrots and onions. Add salt and pepper and soy sauce. Mix well. Add the chopped green onion and stir.
You can add shrimp, chicken or ham to the Fried Rice if you would like.
