My kids love Egg Drop Soup. I think it’s their favorite soup. This soup is easy to make. The egg part is the most time consuming but easy.
4 c Chicken Broth
2 Eggs, beaten
2 Green onions, chopped (white and green part divided)
4 tsp Cornstarch
1/4 tsp White Pepper
1/4 tsp Salt
In a medium pot, add chicken broth, white part of the green onion, salt and pepper. Bring to a boil.
Lower heat to a simmer. In a small container mix cornstarch with 2 tsp of water til the cornstarch in dissolved. Then add to the broth mixture. Stir well.
Using a fork or chopsticks, dip it into the beaten eggs and let the egg drip off into the broth. Keep adding egg til all the egg in cooked. Stir the soup and break up any big pieces of egg.
This is such a yummy soup. My kids insist on having this soup every time we eat Chinese.
