Corn Chowder

Need some yummy chowder for dinner? This recipe has a smooth textile and taste. This is a great dish for those meatless nights. Since this recipe doesn’t have milk or cream, it isn’t a heavy dish either. There is so many yummy favors!

4 ears of Corn shucked

2 large red potatoes, chopped

3 Tbs Olive Oil

1 large onion

5 cloves Garlic

3 carrots peeled and chopped

3 celery sticks chopped

1 Red Pepper chopped

1 1/2 tsp Sea Salt

2 tsp Cajun Seasoning

1/2 tsp Paprika

1/4 tsp Cumin

2/3 c Coconut milk

2 c water or Vegetable Broth

In a large pot or deep large skillet, add oil over medium heat. Add onions, garlic, carrots, celery and peppers. Cook until veggies are tender.

Add coconut milk and water or broth to veggies. Add cumin and paprika. Stir well!

Using a knife to remove the corn kernels from all of the ears of corn. Add corn and potatoes to chowder. Add sea salt and Cajun seasoning.

Turn heat to high. Bring to a gentle boil and cook until potato has softened, about 10 to 20 minutes.

Remove from heat. Let the chowder chill some before serving.
My kids loved this chowder as much as I did. There wasn’t a complaint in the house. It was easy to make and tasted amazing.
I love using a deep skillet to cook. Not have to have a huge pot on the stove is awesome! If you are looking for one to add to your kitchen try this one out!
